Looking for a vitamin and mineral packed side dish? Enjoy this Simplistic Fruit Salad along side an omelette for breakfast, grilled chicken salad for lunch, or as a snack with Greek yogurt. Remember, pair your fruit with a protein and/or fat for better blood sugar control.
Ingredients:
1 lb. strawberries, hulled and quartered
6 oz. blueberries
6 oz. raspberries
3 kiwis, peeled and sliced
1 orange, peeled and wedges cut in half
1 mango, peeled and chopped
2 c. grapes
2 apples, peeled and chopped (optional)
1 banana (optional)
Instructions:
1. Wash and clean all fruit.
2. Peel, dice, chop to your preference.
3. Mix all ingredients in a bowl and chill for several hours.
4. Enjoy!
*If using a banana, peel banana and slice banana right before serving.
