Rice and Spinach

  • 1 cup Instant Jasmine Rice

  • 2 tbsp olive oil

  • 4 tbsp butter

  • 3 cloves garlic, minced

  • 4 cups packed fresh spinach

  • 2 tsp lemon juice

  • 2 tablespoons parmesan cheese


  • Prepare rice according to package directions.

  • Meanwhile, heat oil and butter in medium saucepan set over medium heat; cook garlic for 1 min.

  • Add rice to saucepan and coat with butter and oil.

  • Stir spinach into rice mixture.

  • Lastly, stir in lemon juice and parmesan cheese.

  • Serve with your favorite protein!
